Fortified Rice Kernels to overcome Hidden Hunger & Malnutrition - Hexagon Nutrition

  Fortification of rice can be done by the following methods, according to GAIN: 1.Hot Extrusion: The rice can be fortified by the extrusion process, which involves combining the rice flour, micronutrient premixes and water and then the product is extruded in the form of rice kernels. The process involves subjecting the product to heat i.e. 70°C -110°C, hence the product is precooked ​ 2.Cold Extrusion: This process is like hot extrusion, but there is no heat processing and rice flour is replaced by rice dough, which is combined with the micronutrient premix. The mixture is then extruded in the form of rice like kernels.   What does RUSF stand for? RUSF stands for Ready-to-Use Supplementary Food. It is a fortified paste made up of sugar, dried skim milk, oil, and a micronutrient premix of essential vitamins and nutrients. It may also include groundnuts (peanuts), oil seeds, and soya. RUSF is intended for children aged 6 months and older with Moderate Acute Malnutrition (MAM). They are prepackaged and ready to be consumed immediately without preparation.
